Food & Cuisine in Jinja

The Ugandan menu is a pretty diverse one. While the dishes tend to change from region to region, there is a sense of familiarity about the basic elements. Whether you are experimenting with 'eshabwe' (native royal pudding), 'luwombo' (stew steamed in banana leaves), 'boo' (greens in peanut or sim sim sauce) or 'rolex' (omelette wrapped in chapatti), you'll find the fare deliciously appetising. For as little as 1000 USh, you can expect to have a fulfilling meal.

In the north, meals are usually served with malakwang (a delicious sauce made with greens) and boo. If you're in the east, don't miss the delectable malewa (a bamboo shoot) and ngeni (fish). Other items you may want to try are the eshabwe (best enjoyed in small servings) and the pilao (on par with the most delicious of Spain's rice dishes). Understandably, with such a wide-ranging menu, it is impossible to pinpoint any one dish as Uganda's national fare.

In the rural regions, Ugandan cuisine tends to change depending on the season and location. In fact, in the recent past, urban cuisine too has been reflecting this diversity. The lofty-sounding rolex consists of chapatti rolled around fried eggs and the kikomando is an interesting combination of chapatti and beans.

Uganda also has a selection of juicy organic fruits that can keep hunger pangs at bay while you are on the move. Other characteristic Ugandan meals include dishes made from nswa (white ants) and nsenene (grasshoppers).

The main dishes are generally sauce-based or come in a stew of groundnuts, meat or beans. Starch items in the South are usually derived from boiled and mashed green banana (matoke) or from maize meal (ugali); in the North, an ugali made from millets is prevalent. African sweet potato, yam and cassava are other favourites; more prosperous inhabitants use rice and ‘Irish' (white) potatoes in their cooking. Since the 1970s, soybean has gained popularity as a healthy alternative, especially during breakfast. An Asian flatbread, the chapatti, also features in Ugandan cooking.

Common dishes include chicken, beef, lamb and mutton and both fresh fish and dried fish (used in stewing). However, these are relatively rare among the economically disadvantaged and rural inhabitants. The fish and meat are free-range and organic. Roasted pork, also a favourite, is considered a delicacy.

A local way of making vegetables, fish and meat is to prepare a luwombo by steaming the food in banana leaves. This is accompanied by matoke (mashed and cooked bananas).
